Harvest

The mechanically harvested grapes are destemmed and quickly put into vats.

Winemaking

Maceration lasts for about 10 days. Some pumping over is carried out to extract color and tannins, but without excess.
Drawing off only takes place after tasting to evaluate the color and characteristics of the wine.
Devatting is done manually so as not to crush the grapes.
After malolactic fermentation, we carry out a racking with aeration.
Maturation in tanks.
