Terroir

40-year-old vines on average, covering one hectare, with a subsoil of gneiss overlaid by silty and sandy soils of a fairly fine texture.

Harvest

Manual tipping trailers without pumps, using only an auger to discharge grapes onto a conveyor belt for transport to the pneumatic press.
The pressing time is 1 hour and 45 minutes.

Winemaking

Fermentation begins spontaneously through the action of the grape's natural yeasts and continues until the sugars are depleted... followed by 48 months of aging.
