Terroir

The vines, with an average age of 15 years, grow on a gneiss terroir with sandy-loam soil.

Harvest

Manual forklift-tip bins without pump. The destemmed grapes are put directly into vats to begin maceration.

Winemaking

Fermentation begins spontaneously through the action of the grape's natural yeasts. For a dry white wine, fermentation continues until the sugars are depleted, with temperature control at 19°C.
Aged on lees in underground glass-lined concrete vats for 12 to 14 months.
