Terroir

On the left bank of the Layon, the Bonnes Blanches terroir is a hillside of weathered, highly friable schist that allows for deep rooting of the vines.

Harvest

Hand-harvested in successive passes of overripe, botrytized grapes.

Winemaking

After the harvest, the grapes are pressed for 12 hours.
The settling (débourbage) is done statically and cold.
Alcoholic fermentation lasts for 12 months using indigenous yeasts. There is no chaptalization or artificial concentration of the wines.
Maturation lasts for a total of 18 months in 500-liter barrels.
