Terroir

Caillotes (limestone pebbles of the Sancerre region) on a clay-limestone subsoil in the commune of Verdigny.

Harvest

Hand-picked harvest in small crates.
Vatting in open concrete tanks via conveyor belt. Grapes are protected with dry ice upon vatting to prevent juice oxidation and control the temperature of the harvest.

Winemaking

Natural fermentation using indigenous yeasts.
Devatting once all sugars have been converted into alcohol, followed by the racking of the settled free-run juice into 228-litre barrels (one-third two-year-old, one-third one-year-old, one-third new) sourced from various coopers.
Minimum maturation of one year, determined by the completion of malolactic fermentation, which occurs naturally in the barrels.
