Terroir

The vines of the Le Haut Perray locality in Chahaignes, approximately 30 years old, are 80% planted on south-facing slopes and 20% on the plateau.
The terroir consists half of red clay over a surfacing limestone subsoil, and half of heavier flinty clays resting on deeper limestone.

Harvest

Harvested slightly over-ripe to balance the high tension of this terroir.

Winemaking

Semi-carbonic maceration of whole clusters for 14 days in oak foudres, using indigenous yeasts. Very little pumping over, and more (gentle) foot-pigeage to preserve its elegance. Aged in 228-liter barrels that have held five previous vintages.
