Terroir

Alcoholic fermentation is carried out in temperature-controlled stainless steel tanks for 10 days, followed by a 20-day maceration to perfect the extraction. After devatting and pressing, malolactic fermentation takes place in tanks or barrels.

Harvest

The grapes are harvested by hand and then sorted berry by berry at optimal maturity. "Le Vau Jaumier" is the last parcel of the entire estate to be harvested.

Winemaking

After crushing and destemming the harvest, alcoholic fermentation begins naturally and is conducted in temperature-controlled wooden vats. The cap is punched down by foot twice a day for about ten days, and maceration is then extended for 15 to 20 days to perfect extraction. The wine is transferred into barrels after devatting and pressing.
Following an 18-month aging process in one-year-old barrels, the wine is bottled without fining or filtration.
