Winemaking

After pressing and cold settling of the juice for several days, the future "Le Grand Chemin" cuvée ferments in 225, 300, and 500-liter oak barrels. Subsequent aging on total fermentation lees until the following year's harvest provides intensity and aromatic complexity. The various barrels that make up the cuvée are finally blended in a tank for about 6 months before bottling.
