Terroir

Located mid-slope, the vines, with an average age of 25 years, face southwest. They grow in sandy-silty micaceous and highly glauconitic chalk soils.

Harvest

The harvest is done by hand in crates to preserve the integrity of the fruit. Sorting of whole bunches and berries.

Winemaking

Gravity-fed vatting, no crushing. Spontaneous fermentation with indigenous yeasts. Gentle 30-day maceration in stainless steel and concrete tanks, followed by 8 months of aging in 400 and 500-liter barrels.
