Clément Poupée

Terroir

Clay-limestone and schistous.

Harvest

The grapes are destemmed and placed into vats quickly.

Winemaking

The maceration lasted an average of over three weeks.
Some pump-overs are performed to extract color and tannins, but without excess. Draining only takes place after tasting to evaluate the wine's color and characteristics. Devatting is carried out manually so as not to crush the grapes.
The free-run juices are separated from the press wines, then reassembled after aging.
After malolactic fermentation, the wines are racked into vats.
Aging for twelve to fifteen months in vats until bottling, which is performed after gentle cross-flow filtration.
